Essential material

  • Bitter gourd – 500 grams
  • Mustard oil – 250 ml
  • Salt – as per taste
  • Fennel – 2 tablespoons
  • Fenugreek seeds – 1 tbsp
  • Rai (PC) – 2 tablespoons
  • Turmeric powder – 1 tsp
  • Red chili powder – 1 tbsp
  • Amchur powder – 2 teaspoons
  • Asafoetida – 1 pinch
  • Vinegar (Vinegar) – 2 tablespoons (optional)
  • How to prepare bitter gourd
    First of all wash the bitter gourd thoroughly and cut it into thin pieces. After this, mix a little salt in the chopped bitter gourd and keep it for 2 hours so that bitterness is removed. After 2 hours, squeeze the bitter gourd and drain its water and spread it on a clean cloth so that it dries well.

    Prepare the masala
    Fry fennel and fenugreek seeds lightly in a pan and then coarsely grind it. Now mix PC rye, turmeric, red chili, mango powder, roasted fennel and salt in a vessel and mix.

    Pickle process step by step

    • 1. Heat mustard oil in a pan and add asafetida to it. When the oil cools down, mix it in the spices.
    • 2. Now add dry bitter gourd and mix well.
    • 3. If you want, you can also add some vinegar to it so that the pickle remains for a long time.
    • 4. Now fill this pickle in a clean glass jar and keep it in the sun for 2-3 days.

    Essential precautions
    All things used in making pickles should be dry. Always remove the pickle with a clean and dry spoon. Keep the pickle in a cold and dry place so that it remains fine for 6 months.
