Ingredients to make Rusk:
Semolina (rava) – 1 cup
Curd – ½ cup
Sugar – 4 cups (as per taste)
Milk – 4 cups
Baking Powder – ½ tsp
Cardamom Powder – ½ tsp
Ghee or butter – 2 tablespoons
Dryfruits (cashews, almonds etc.) – to decorate
Method of preparation (in cooker):
1. Preparation:
1. Add semolina, curd, milk, sugar and cardamom powder to a bowl.
2. Mix everyone well and make a thick solution.
3. Cover it for 10-15 minutes so that the semolina swells.
2. Prepare the mold:
1. Take a cake tin or steel plate, apply ghee in it and sprinkle a little dry swollen.
3. Prepare the cooker:
1. Lay a layer of salt or sand in the pressure cooker (about 1 cup).
2. Keep a stand and cover the cooker and preheat on medium flame for 5 minutes (remove whistle and rubber gasket).
4. Baking:
1. Pour the prepared mixture in the mold and keep it in the cooker.
2. Close the lid (without whistle) and cook on low flame for 35–40 minutes.
3. Check by adding toothpick in the middle. If it turns out, Rusk is ready.
5. Rusk Making:
1. Cut the cake and cut it into thin slices.
2. Und these slices on the pan or again on a low flame in the cooker till it crisps from both sides.
Tips:
1. Rawa semolina should be fine.
2. If you like more sweet, you can increase the amount of sugar.
3. Keep the rusk in the airtight compartment, it does not spoil for weeks.
