Material
For koftas:
Besan – 1 cup
Turmeric – 1/4 teaspoon
Red chili powder – 1/2 teaspoon
Fennel (coarse ground) – 1/2 teaspoon
Salt – as per taste
Green coriander – finely chopped
Baking Soda – 1 pinch (to make the koftas soft)
Oil – to fry
For gravy:
Tomatoes – 2 medium sized (ground)
Onion – 1 medium (finely chopped or paste)
Ginger-garlic paste-1 teaspoon
Green Chilli – 1 (Finely chopped)
Turmeric – 1/4 teaspoon
Red chili powder – 1/2 teaspoon
Coriander powder – 1 teaspoon
Garam Masala – 1/2 teaspoon
Salt – as per taste
Oil-2-3 tbsp
Green coriander – to decorate
Water – as required
Recipe
Method of making koftas:
Add gram flour, turmeric, chili powder, fennel, salt, coriander and baking soda in a large pot.
Prepare a thick paste with a little water.
Heat oil in the pan. When the oil is hot, then add the gram flour mixture like small shells or dumplings and fry it on low flame till it becomes crisp and golden.
Remove all the koftas and keep it on the tissue paper, so that the excess oil comes out.
Method of making gravy:
Heat oil in a pan. First add onion and fry it till it becomes golden.
Now add ginger-garlic paste and green chili. Fry for 1 minute.
Add tomato puree and add spices (turmeric, chilli, coriander powder).
Cook the mixture until the oil starts separating.
Now add salt as per taste and boil the gravy by adding some water.
When the gravy is cooked, add garam masala to it and cook for 2 more minutes.
Kochte Putting:
Insert the koftas in the gravy and cook on low heat for 4-5 minutes so that the koftas absorb the gravy.
Note that the koftas do not cook for a long time, otherwise they can break.
Decoration and serving:
Add green coriander over it and serve with hot bread, paratha or cumin rice.
