After this, add fenugreek seeds, black pepper and cumin seeds. Then add dry red chili and curry leaves and finally add coconut and asafoetida and fry till it becomes light brown. After cooling this entire mixture, grind coarsely or finely in the grinder. Your Sambar Premix is ​​ready. It can be stored for 1-2 months by filling in airtight compartment.

Now whenever you want to make sambar, just mix 2-3 teaspoons of this premix with boiled pigeonpea dal and vegetables (such as gourd, tomato, okra, carrots etc.). Add salt according to taste and if needed, you can also add a little tamarind pulp or lemon juice. After boiling 5-7 minutes, apply mustard seeds, dry red chili and curry leaves on top and are ready immediately delicious sambar.
