Jaggery- 3-4 tablespoons (as per taste)

Method of preparation:
1. Cut tomatoes:
Wash the tomatoes thoroughly and cut it into small pieces. If you want, you can remove seeds, but not necessary.

2. Apply spices:
Heat mustard oil in a pan. When the smoke starts coming out of the oil, then slow down the gas and add asafetida, mustard, fennel and fenugreek seeds to it. Fry for a few seconds until the fragrance starts coming.

3. Add tomatoes:
Now add chopped tomatoes and cook on medium flame by mixing a little salt. Tomatoes will slowly start melting and their juice will start leaving.

4. Add spices and jaggery:
Now add turmeric, red chili powder and mix well. When tomatoes start becoming thick paste, add jaggery to it and let it cook on low flame.

5. Let cook:
When the jaggery melts completely in tomatoes and the mixture becomes slightly thick, then turn off the gas. If you want to store the pickle for a long time, add vinegar and mix well.

6. How to store:
Allow the pickle to cool down completely. Then fill it in a clean dry bottle or jar of glass. This pickle remains fresh in the fridge for 10-15 days.
