Acacia trees are found in plenty in rural areas of Rajasthan. Acacia beans live from April to June. Many medicinal properties are also found in them. In rural areas, women dry and sell animals by drying acacia beans.

Ayurvedacharya Dr. Virendra Kumar Shastri said that the stem, root and fruit of the acacia tree have been used medicinal. This tree has many medicinal properties. Teeth can be strengthened by chewing the bark of acacia. When bleeding from the gums, chewing it continuously removes the problem.

He said that the paste of acacia bark is considered very useful in diagnosis of skin problems. Applying acacia bark in case of pimples provides relief. In addition, the powder of acacia pod gives immediate relief in abdominal pain and diarrhea problem. Acacia beans are considered very useful in Ayurveda. At the same time, acacia leaves and bark are helpful in healing body wounds.

Acacia’s pod vegetable is included in traditional Rajasthani cuisine. This vegetable is tasty as well as rich in medicinal properties. To make its vegetable, first wash the soft pods of acacia and cut it into 1-2 inch pieces.

If the pod is fibrous, remove the seeds and take a soft part. After this, put some water in a vessel and add chopped pods and some salt and boil it on medium flame for 5-7 minutes and then filter and remove the water. After this, heat mustard oil in the pan.

Add asafetida and cumin seeds to it. When the cumin seeds start crackling, add crushed garlic and green chillies and fry lightly. Now add turmeric, red chili and coriander powder and fry for 1 minute. Now add boiled pods and mix it well in spices and let it cook on low flame for 5-7 minutes. When the pod mixes well with spices and fry lightly, turn off the gas. This vegetable looks very tasty with millet or tide bread. It can also be served with buttermilk or curry.
